Rhubarb cake recipe.....

My rhubarb is really growing in the garden.  If you're one of the many who have never tried rhubarb, you are in for a real treat if you try my cake. 
Rhubarb Cake
1 1/2 cups packed brown sugar
1/2 cup butter
1 egg
1 tsp. vanilla
2 cups flour
1 tsp. soda
1 tsp. salt
1 cup buttermilk
2 cups cut-up rhubarb

Topping:
1/4 cup granulated sugar
1 tsp. cinnamon

Grease and flour 9 X 13" pan.  Cream brown sugar, butter and egg together.  Add vanilla.  Sift flour, soda and salt together.  Add alternately with buttermilk.  Fold in rhubarb.

Pour into baking pan and sprinkle with sugar & cinnamon mixture.  Bake one hour at 350 degrees.

It's a wondeful cake and works great for a coffee cake.

My garden is doing really well even though it's in need of a good rain.  I've planted 2 tomato plants but will plant more next week.  In Mo. it's best to wait until the first part of May for tomatoes. 



I'm trying to go out everyday and do a little work so the weeds don't get a chance to grow.  So far it's worked.  I love being able to go out and have lunch out of the garden.

My rhubarb can be picked this year...so guess what I'm gonna bake, how delicious does your cake sound...now, all I have to do is find the time...this moving is for the birds!!!

Don't work toO hard in that garden missy...I know, I know, I won't either(yeah right)!!!

Your garden looks beautiful! This has been a wonderful, colorful spring. And you're right about the lilac fragrance. My Mock Orange will probably be in full bloom in a week...heavenly!

Jan - Finally had a chance to catch up with your blog. Everything looks so wonderful. The cake sounds delicious... I'll pass on the recipe. Your ferns are wonderful... just getting some started myself. I planted up a bunch of containers this week. I'll have to cover them a few nights this week, but am thankful to have them done. I don't have a green thumb, so wish me luck.
