Santa and the grandkids......

These are my grandchildren who are growing up way, way too fast.  Where does the time go!!!! 

One more day to get some things finished.  I've made 12 more bottles of my chai tea mix.  I found ginger snowman marshmallows that are so good & a couple of them in my chai tea is heavenly.

After a couple more gifts, the shopping will be done (except for food).  I'll admit it -- food is so important to my holiday.  I just sent this recipe to Kenda & thought you might like it.  It's the best potato soup & most likely, the simplest.  Allison & John are fixing it for Christmas Eve. 

Easy Potato Soup




2 lbs. frozen hash browns, thawed

½ cup butter

½ cup chpd. Green onions

1 (10 oz.) can cream of chicken soup

Salt & pepper to taste

3 - 4 cups Half ‘n Half or milk

(I use ½ of ea.)

1 cup shredded cheese

Parsley flakes or chopped chives for garnish



Saute onion in butter. Add soup, cream, & thawed potatoes. Stir in cheese

And heat gently. Garnish & serve. Serves 8 - 10.

You could use fat free half and half in the soup-I can't tell the difference when I use it in soups/sauces/mashed potatoes etc.

I'm about to divide my tea and give half to our daughter for Christmas. Where do you get ginger Santas?

Laura, I'll try the fat-free. You can find the ginger snowmen marshmallows at Walmart. Hope you all enjoy the tea. Try it with 1/2 water & milk & a couple of the mm & you'll love it. Enjoy & merry Christmas! Jan

Hey Jan...
It is Beautiful here.... However...it's getting way deep outside...we were supposed to get 3-5...we have already gotten 7...and it's coming down harder! Oh dear...

And.... I will be over for Soup...later...{so wish I could!} I use ff, everything... however... on a snowy, blustery day....Give me the whole milk...and Lots of Butta!

Merry Christmas Jan! We had the best chai when we were in India in September. I certainly have not been able to duplicate taste or the ambience here at home. :) Ginger marshmallows sounds absolutely divine ... and the soup delish. The kids are so cute and I agree - where does the time go? Also going to try the recipe - love easy and no meat too. It is a win win.
